Cowboy Man Beans Recipe

1 lb dried pinto beans
6 C water
3 lbs pork meat
1 lrg onion, chopped
2 lrg carrots, chopped
⅓ C molasses
2 t. salt
t. ginger
t. dry mustard
t. cumin
t. pepper

Rinse beans, place in large pot, cover with water, boil 15 mins, remove and let stand. Don't drain fat; flour meat and brown on all sides

Add beans and liquid, onion, carrot, molasses, spices. Cover and bring to a boil.

Lower heat and simmer 1 hours. Add water if needed to keep beans and meat covered.
