1( 14¾ oz.) can pink salmon (undrained)
½ sleeve saltine crackers (crushed)
¼c self-rising flour
1 lg egg, slightly beaten
1 sm onion (chopped)
¼ tsp pepper
¼ tsp salt


Directions:
Directions:
In a large frying pan or cast iron pan heat 1/3 cup oil.
In a large bowl, mix pink salmon, (de-boned), flake with a fork, combine crush crackers, onion, salt and, pepper.
eggs and flour. Mixed all ingredients and let stand for 5 minutes until liquid is absorbed.

Form into patties, and fry in oil until brown, turning once. put on a draining rack to drain grease.
