1 1/2 cup lukewarm water (110 degrees)
1 tablespoon sugar
1 3/4 cup whole wheat flour
2 cups bread flour
1 teaspoon salt
1 tablespoon cocoa powder
2 teaspoons espresso powder
2 tablespoons molasses
1/4 cup honey
2 1/4 teaspoons instant yeast
4 tablespoon butter, softened
Oats, optional

Directions:
Directions:
Proof yeast in water and sugar for 5 minutes. Mix in other ingredients with yeast mixture. Knead for 8-10 minutes. Let dough rise for 2 hours in greased bowl covered in plastic wrap. Shape and rise for another 1 to 1 1/2 hour. Lightly wet the top of the shaped loaves and sprinkle the oats on top. Bake at 350 degrees for 20 to 25 minutes. Cool and wrap in plastic wrap to maintain freshness or to freeze.
