⅓ C sugar
2 T cornstarch
⅛ t. salt
2 C milk
2 egg yolks, slightly beaten
2 T butter
2 t. vanilla

Directions:
Directions:
Mix sugar, cornstarch, and salt in 2 quart saucepan. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 min. Stir at least half of the hot mixture gradually into egg yolks; stir into hot mixture in saucepan. Boil and stir 1 min; remove from heat. Stir in butter and vanilla. Refrigerate.

CHOCOLATE PUDDING: Increase sugar to ½ C and stir in ⅓ C cocoa into sugar mixture. Omit butter.
