2 slices of bread

1 container ricotta cheese
zest from 1/2 a lemon
2 Tbsp cream or plain yogurt
1 Tbsp honey

Strawberry jam, or your choice

Directions:
In a small bowl, put the ricotta, cream, lemon zest and honey and mix well.

Toast bread.
Spread generously with ricotta mixture and top with jam.

Serve.
Yum.

ALTERNATE:

Omit the lemon zest. Top the toast with the ricotta mixture and sprinkle with cinnamon. Place under the broiler until hot.

Serve.
Double Yum!


This is a quick and easy breakfast...great with your morning coffee.
