2 leeks, white part only, sliced
1 Tbsp extra virgin olive oil
1 Tbsp butter
1 whole cauliflower
Chicken broth
Kosher salt and ground white pepper

1 jar basil pesto, 1/2 Tbsp. per serving (I like President's Choice Basil Pesto)

Directions:
Directions:
In a large pot over medium heat, put in the olive oil & butter to heat.
Add the sliced leeks and cook until softened.
Add the cauliflower to the pot and add enough chicken stock to just cover the cauliflower.
Bring to a boil and then reduce heat to a simmer and cook until the cauliflower is very soft, approximately 30 minutes.
Take off the heat and purée the cauliflower mixture until it is very smooth.
Season with salt and ground white pepper, to taste.

To serve:

Place soup in a bowl and top with a "swirl" of basil pesto.

I found this recipe in Bon Appetit way, way back when Barry & I first got married. The original copy of the recipe is long gone and this is the way I remember making it.

This is a simple recipe but very tasty and presents well, if you are going to serve it as a first course to company.
