1 rack of lamb, approx. 1 1/2 lbs.
Kosher salt
Freshly ground black pepper

Directions:
Directions:
Preheat oven to 450º F.

Salt & pepper rack of lamb and place on baking sheet.
Put in preheated oven and cook for 10 minutes.
Turn down heat to 300º F. and cook for another 10-20 minutes (internal temperature should be 125º F.)

Remove from oven and cover with aluminum foil and let meat rest for 15 minutes before cutting into chops and serving.

I love lamb. Lamb and salmon are my #1 and #2 and I'm not really sure which I love more.

This method has come through trial and error. I found the directions written in the back of one of my old cookbooks.
