½ cup shortening
1 cup sugar
1 egg
2 ½ cups sifted flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
½ cup milk
1 ½ tsp. vanilla
1 tsp. lemon extract

Directions:
Directions:
Preheat oven to 325 degrees. Cream shortening and sugar together. Add egg. Sift together flour, salt, baking powder, baking soda, and all alternately with milk to creamed mixture beginning and ending with flour mixture. Add vanilla and lemon extract. Drop by spoonfuls onto greased cookie sheet. Bake 10 – 12 minutes. Remove from oven and while still warm, sprinkle with sugar.
