Ingredients:  
1 large boneless chuck roast ( 2-3lbs) trim excess fat from roast.
1 small jar pepperoncini with liquid
1 large onion, cut into rings
1 large green pepper, cut into rings
1 can beer
1Tbsp oregano
1Tbsp basil
1 Tbsp minced garlic
4 beef bouillon cubes

Directions:
Directions:
Place roast in pan (Dutch oven). Layer remaining ingredients on top of roast.
Cover and bake 350 F for 4 hours.
When done shred with forks.

Optional: reserve onions and peppers to place on the bun with the beef.
Serve on large soft buns. Top with Monterey Jack cheese.
