Tart shells:
3 cups sifted all purpose flour
1 1/2 teaspoons salt
1 cup shortening(Crisco)
6 Tablespoons COLD water(about)

Filling:
Grated rind of 2 Lemons
1/2 cup Lemon Juice
2 cups sugar
1 cup butter
4 eggs-well beaten
pinch of salt

Tart shells:
Mix flour, salt and shortening. Add water gradually to form dough. Roll thinly and cut with biscuit cutter and form into lightly greased small muffin tins or tart shells. Bake at 350 degrees until lightly browned. Cool completely.

Filling:
Combine lemon rind, lemon juice and sugar in top of double boiler over low heat. Add butter and stir until butter is barely melted. Stir in eggs and salt and continue cooking---stirring constantly until mixture is thick enough to pile slightly(20 to 30 minutes). Cool thoroughly. Spoon into tart shells. Top with sweetened whipped cream, if desired.

This is a time consuming recipe but they are worth it!!! Delicious!!!
