Overnight Blueberry French Toast Recipe

12 slices day old bread cut into 1 inch cubes
2 packages cream cheese cut into 1 inch cubes
1 C fresh blueberries
12 eggs, beaten
2 C milk
1 t vanilla extract
1/2 C maple syrup
1 C white sugar
2 T cornstarch
1 C water
1C fresh blueberries
1T Butter


Directions:
Directions:
Lightly grease a 9x13 baking dish. Arrange half the bread in the dish and top with cream cheese cubes. Sprinkle 1 C blueberries over the cream cheese and top with remaining bread.

In a large bowl, mix the eggs, milk, vanilla, and syrup. Pour over the bread cubes. Cover and place in fridge overnight.

Remove from fridge about 30 minutes before baking. Preheat the oven to 350 degrees.

Cover and bake 30 minutes. Uncover and continue to bake 30 minutes.

In a saucepan, mix the sugar, cornstarch and water. Bring to boil stirring. Cook 3 minutes. Mix in 1 C blueberries. Reduce heat and simmer 10 minutes. Stir in butter and pour over baked French toast.
