"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
2 lbs wings
2 c vegetable oil (for deep frying)
¼ c Durkee Frank’s Red Hot Sauce (or your favourite)
1 T ketchup (optional – for medium hot)
1 T vegetable oil
1 t butter
1 t vinegar (red or cider)
¼ t garlic powder

Directions:
Directions:
In a medium non-stick skillet or wok, heat the oil to 190° (or use a deep fryer).
Deep fry wings 8 to 10 minutes or until nicely browned and crisp.
Meanwhile stir together the remaining ingredients in a small bowl. Remove the wings onto a paper towel lined plate.
Pour the sauce into a skillet; add wings and gently toss for one minute.
Place on a medium heated element. Continue tossing two minutes or until the wings have completely absorbed the sauce.
Serve with blue cheese dip.

Note: I made extra sauce, dipped wings in it and then stir – fried them 1 or 2 minutes to allow sauce to adhere to wings. I made the hot ones using the above recipe; just great!
