1 box RiceARoni Spanish Rice
2 tbsp butter
1 14.5 oz can fire-roasted diced tomatoes
2 c water
1 Trader Joe's soy chorizo

Fresh avocado slices
sour cream
your favorite salsa

Directions:
Directions:
Follow the Spanish Rice box directions, browning the vermecelli and rice in butter and using the fire-roasted diced tomatoes..
Remove the chorizo from its casing and heat on low.

Top the rice with the chorizo. Add a few slices of avocado, a spoonful of salsa and also of sour cream.
