4 split chicken breasts, bone in, skin on
olive oil
salt and pepper
¾ cup mayonnaise
1½ tbsp chopped fresh tarragon leaves
¼ cup freshly chopped Italian leaf parsley
1 cup small diced celery
1 cup small diced green bell pepper
½ cup finely diced green onion
Fresh lemons

Directions:

Preheat the oven to 350º

Place the chicken breasts skin side up on a sheet pan. Rub them with olive oil and sprinkle with salt and pepper. Roast 35-40 minutes until cooked through.
Set aside to cool.

When chicken is cool, remove from the bone and discard the skin. Chop the chicken into small dice.

Place in a bowl and add the remaining ingredients.
Taste to correct the seasoning. Squeeze fresh lemon juice in to taste at the end.
I sometimes add dried tarragon to punch up the flavor.
