2½ lbs Small gold yukon potatoes or red potatoes if preferred
2 yellow onions
3 tbsp olive oil
2 tbsp whole grain mustard
kosher salt
ground pepper
¼ cup chopped flat leaf parsley

Directions:
Directions:
Preheat to 425º

Cut the potatoes in half and place on a sheet pan.
Peel and slice the onions by cutting them in half, then slicing crosswise to make half-rounds.
Toss the onions and potatoes together on the sheet pan. Add the olive oil, mustard, 2 tsp of salt and pepper. Toss until well mixed.
Bake 50 - 60 minutes until well browned. Stir the potatoes from time to time to make sure they brown evenly.
Serve sprinkled with parsley and a little extra salt.
