8 tbsp butter, divided
2 cups peeled and diced potatoes
8 extra large eggs
15 oz. ricotta cheese
¾ lb. gruyere cheese, grated
½ tsp. kosher salt
½ tsp. pepper
¾ cup chopped fresh basil leaves
⅓ cup flour
¾ tsp. baking powder

preheat oven to 350º
Melt 3 tbsp butter in a 10" oven proof omelet pan over medium low heat; add the potatoes and cook until done 10-15 minutes. Melt remaining 5 tbsp butter in microwave.
Whisk eggs in a large bowl, stir in the ricotta, gruyere, melted butter, salt, pepper and basil.
Sprinkle on the flour and baking powder and stir into the mixture.
Pour the egg mixture over the potatoes and place in the oven. Bake until puffed and brown - approx. 50 minutes to an hour.
It will be done when a knife comes out clean.
