4-5 big white potatoes diced
2 lg onions chopped
chicken broth or chicken bullion
3-4 bacon strips
1 can evaporated milk
1 stick butter
salt and pepper to taste

Chopped green onion

Boil potatoes and onions, with bacon strips, in broth or bullion unil tender. Drain and save broth.

Put potatoe mixture back in large pot. Add butter and mash until melted. Add evaporated milk and either regular milk or broth to desired consistency. Season to taste with salt and pepper.

Serve topped with shredded cheese and green onions
