1/2 lb good quality blue cheese
1/2 medium onion coarsely chopped
salt and freshly ground pepper to taste
1/4c cider vinegar
juice of 1 small lemon
1/4t hot sauce to to taste
1T Worcestershire sauce
1c olive oil

Directions:
Directions:
Place half the cheese, the chopped onion, salt, pepper, vinegar, lemon juice, hot sauce and Worcestershire in the work bowl of a food processor. Puree until well blended and liquefied. Slowly drizzle the olive oil into the mixture, then turn off the machine. Crumble in the remaining cheese and pulse until well blended. There should be lots of small cheese chunks remaining in the dressing. Adjust seasoning and refrigerate for up to 2 weeks.
