Bigmama's Orange Cake Recipe

CAKE:
One box yellow cake mix
1 package instant lemon pudding
4 eggs
3/4 cup corn oil (just shy of 3/4 cup)
3/4 cup water

ICING:
2 cups powdered sugar
1/3 cup plus 2 tbsp. frozen concentrate orange juice
2 tbsp. melted butter

Directions:

CAKE:

Preheat oven to 325º.
Place all ingredients in a bowl and beat with electric mixer on low for 2 minutes; scraping sides constantly.
Pour into greased and floured tube pan. (I just spray it with cooking spray).
Bake at 325 for 45 minutes.

When HOT cake comes out of oven, poke holes all around cake going all the way through to the bottom of the pan. (I use wooden skewers for this)

Once holes are done, pour the icing (directions below) over the hot cake and then let cake cool before serving.

ICING:

Mix all ingredients until well blended, if too thick add more orange juice.

Another Young Christmas tradition. I enjoyed this as a child from my bigmama's (grandmother) and before my mother passed away, she finally gave me the recipe and I've been making it ever since.
