1 TBSP olive oil
1 small onion, finely chopped
1 garlic clove, crushed
7-ounce can chopped tomatoes
1 fresh red chile, seeded and finely chopped
1 TBSP vinegar
1 TBSP chopped cilantro

Directions:
Directions:
Heat the oil in a saucepan, add the onion and garlic and cook for 5-10 minutes, until soft. Add the chopped tomatoes, with their juice. Stir in the chile and vinegar; cook gently for 10 minutes or until the mixture has reduced and thickened, then check the seasoning. Stir in the cilantro and serve hot.
