Pumpkin Roll Recipe

3 eggs
1 c. sugar
2/3 c. canned pumpkin
1 tsp. cinnamon
3/4 c. flour
1 tsp. baking soda

8oz. cream cheese
1 c. powdered sugar
1 1/2 tsp. vanilla
2 T. butter

Grease 10 x 15 cookie sheet and line with wax or parchment paper. Grease the paper.

Mix the eggs, sugar, canned pumpkin, cinnamon, flour, and baking soda. Spread batter onto the cookie sheet. Bake at 375 for 10-15 minutes or until toothpick comes out clean.

Sprinkle powdered sugar onto a linen towel or parchment paper. Dump cake right from the oven onto the towel , remover the wax paper and rollup cake in the towel lengthwise. and let cool.
Prepare the filling. Mix cream cheese, powdered sugar, vanilla, and butter until blended.

Unroll the cake and remove the towel. Spread filling on top of the cake and roll back up. Refrigerate.
