Vegan Broccoli Salad Recipe

c raw cashews, soaked
c water
2T maple syrup
2T cider vinegar
1 lg clove garlic, minced (optional)
salt and pepper to suit

Ingredients in salad
2 large crowns of broccoli, chopped
1c red grapes cut in half
c toasted salted almonds, chopped
c diced red onion
c raisins or cranberries (optional)

Cover cashews with water and soak overnight.(or soak in hot water for 10 min and blend with high speed blender till creamy)
Drain cashews and and put in blender with all the remaining ingredients and blend till smooth.
Put all the veggies and fruit into a bowl and pour dressing over top and mix well. Serve cool.
