Crust
1c butter
c white sugar
2c all purpose flour

Filling
4 eggs
1c white sugar
c all purpose flour
rind of 2 lemons
juice of 2 lemons (1/2 to 2/3 c real lemon juice)
1/4c fine grated lemon rind

Directions:
Directions:
Mix the first 3 ingredients together till have a crumbly crust. Press firmly into and 8 X 8 pan lined with parchment paper.
Preheat oven to 350 and cook about 15 minutes or till golden. Remove from oven
Beat together the remaining ingredients and pour over crust. Return to oven and cook another 20 minutes. Remove from oven. They firm up as they cool. You can lift out of pan on the parchment and cut while still a little warn. You can also put a little icing sugar in a sifter and sprinkle a little over the top to decorate. One lemon is aprox. 1/3 cup lemon juice if you want to use part bottled lemon juice
