South American Baked Rice Recipe

10 oz spinach, frozen, defrosted and well drained
1 cup rice, cooked
4 eggs, beaten
2 cups Monterey jack cheese, grated
1 small onion, diced
2 T butter
1 cup milk
1/2 tsp rosemary
1/2 tsp marjoram
Salt and pepper to taste

Directions:
Directions:
Saute the onion in the butter until soft. Mix with all ingredients.
Add to a lightly oiled 2 quart casserole dish.
Bake at 350º for 25 to 35 minutes [or until set]. Serve warm.
