1 1/4 c. whole fat buttermilk
1/4 c. oil
1 1/4 c. flour
1/4 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1/3 tsp. salt

Directions:
Directions:
In a large bowl mix the egg, buttermilk and oil. Sift the remaining ingredients into another bowl and mix well. Add the dry ingredients to the large bowl slowly, being careful not to overmix (there will be some lumps). Butter a non-stick pan and heat over medium heat. Drop batter by 1/4 c., cooking about 1-2 minutes per side. Serve with warm syrup, freezer jam and fresh whipped cream.

When I was a little girl, we'd drive to Malad, Idaho, every other year and visit my Great-Grandpa Lewis and Grandma Nana. We'd sleep in comfortable beds in the basement and wake to Grandma Nana making her "hotcakes" with home-made jam and jarred peaches. Then we'd spend the day playing pool, messing around on the organ and playing croquet in the backyard. I've searched for years for the best pancake recipe and this is it! It is my tribute to amazing memories with my great-grandparents.
