2 c. of sugar
1 c. oil
2 c. finely grated unpeeled zucchini
optional - 1 can crushed pineapple

Mix and add to:

3 tsp. vanilla 1 tsp. salt
3 c. flour 1 tsp. baking soda
2 tsp. cinnamon tsp baking powder

Directions:

grease and flour pans. Dates, nuts, or raisins may be added. Divide into 2 loaf pans and bake at 350 for 1 hour or till done.
