2 cups flour
2 cups sugar
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
4 eggs
1 cup canola oil
3 cups grated carrots
about 4 medium or large carrots
cup chopped pecans

Frosting:
8 oz cream cheese
cup butter
1 tsp vanilla
4 cups powdered sugar

Directions:
Directions:
Preheat oven to 350 divide bater between two 9 inch or two 8 inch cake pans and bake for 30 to 35 minutes. Or until toothpick inserted into the center of the cake comes out clean.
Frosting: In a medium bowl, combine in bowl, combine cream cheese, butter, vanilla, and powdered sugar. beat unti the mixture is smooth and creamy. Frost and the cooled cake.
