8 tbsp butter (softened to room temp)
2 cups sliced celery
1 cup diced shallots
¾ cup chopped yellow onion (sweet Maui)
3 cloves garlic, minced
6 oz fresh shiitake mushrooms, sliced
6 oz fresh cremini mushrooms, sliced
6 oz fresh oyster mushrooms, sliced
½ cup dry sherry
½ cup white wine
8 cups chicken broth
¼ cup flour
½ cup whipping cream

In a large pot:
melt 6 tbsp butter, add celery, onions, shallots and garlic. Saute until translucent
add mushrooms and cook until soft
add wine and sherry and boil until liquid is reduced to a glaze (6 min)

In a separate saucepan:
melt 2 tbsp butter
add flour to make a thickening paste

Add paste to large pot stir in broth, boil 10 minutes. Add cream. Puree in blender or until blend till chunky - whichever you prefer.
