2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp Kosher salt
1/2 cup butter, unsalted
1/2 cup granola
1/2 cup whipping cream
1/4 cup packed brown sugar
1 Tbsp honey
1 cup dried cherries

GLAZE:

1/4 cup milk
1/4 tsp vanilla

Directions:
Directions:
Preheat oven to 325º F.
Line a backing sheet with parchment paper.

Combine flour, baking powder, baking soda, and salt in a bowl. Using a whisk, stir dry ingredients to combine ingredients well.
Cut in the butter until the mixture is the size of peas.
Stir in the granola.

In a separate bowl, combine the cream, brown sugar and honey, and add to the flour mixture. Stir with a fork until the dry ingredients are absorbed.
Add dried cherries.

Use a spoon to gather 1/2-cup portions of batter and pat gently into a round, about 2-inches in diameter and 1-inch thick. Place on prepared baking sheet. Repeat with remaining batter.

Combine milk and vanilla extract and brush glaze over the top of each scone. Bake for 10 minutes, rotate baking sheet in the oven, and cook another 10 to 12 minutes or until golden.

NOTE: When measuring the flour for this recipe -- spoon the flour into the measuring cup and then level it off....rather than scooping the measuring cup into the flour container. There is a difference in the amount of flour (less) used by this method.

I loved the ingredients in this scone. The addition of granola for crunch and the sweet, tart taste of the dried cherries...gotta love it!

These are a nice side with the Duck Confit Hash (recipe in the Miscellaneous section of this book). Cherries and duck are a beautiful combination.
