2 cups sugar
2 cups flour
1 tsp baking soda
1 tsp vanilla
1 can(20oz) crushed pineapple, with juice
½ cup pecans, chopped

Directions:
Directions:
Mix all ingredients together and bake in a 9x12 inch pan that has been greased and floured. Bake at 350º for 30 minutes.
When mixing ingredients for baking it is best to use a mixer and beat for at least 2 minutes. This allows air into the batter so it rises better.
 

Icing

1/2 cup margarine or butter, melted
8 oz cream cheese
3/4 cup granulated sugar
1 tsp vanilla
1/2 cup pecans, chopped

Beat first 4 ingredients until stiff & fluffy. Add pecans and pour on warm cake.

This is a cake you can leave in the pan and just put icing on top. Also, can be put in freezer and taken out when company comes. Just let sit out a few minutes.
