CRUST
1 ¾ cups graham-cracker crumbs
½ cup butter, melted
¼ cup granulated sugar

FILLING
3 pkgs cream cheese at room temperature
1 ½ cups sugar
4 large eggs
1 tbsp vanilla

TOPPING
1 ½ sour cream
¾ cups sugar
1 tsp vanilla

CRUST
Blend cracker crumbs, melted butter and ¼ cups sugar. Press onto the sides and bottom of a well-greased, 10-inch spring-form pan. Set aside.

FILLING
Preheat oven to 300 degrees. Mix cream cheese and sugar for 3 – 5 minutes. Add the eggs and vanilla. Beat the mixture for 30 minutes. Turn the cheese mixture into the prepared pan and bake 50 minutes to 1 hour. Remove from oven and let cool at room temperature for 20 minutes.

TOPPING
Blend sour cream, sugar and vanilla. Pour atop the cooled cheesecake and return to the oven for 10 minutes longer. Let cool. Serve.
