1 lb pinto beans
water
2tsp salt
4Tbsp shortening

Directions:
Directions:
Sort 1 pound of pinto beans. rinse with cold water. Soak beans overnight in 2 quarts water. Drain. After beans have been drained, add 2 quarts fresh water to beans and simmer about 1 hour until tender. When the beans are almost cooked, add 2 teaspoons salt. You don't want too much water in the beans when they are done. To refry, drain most of the water from the beans and smash beans well. In a sauce pan melt 4 tablespoons shortening. When oil is very hot, put beans in oil and cook for a while. Serve as a side dish with grated cheese on top or in burritos or tostadas.
