2 Zucchini, sliced lengthwise
2 yellow Squash, sliced lengthwise
1 each red, yellow and orange bell peppers, slice

1 box corkscrew pasta

2 cups cherry tomatoes

Mixed Spring Greens

Basil, thinly sliced

Pesto Vinaigrette
3 T peso
2 T fresh lime juice
3 C Olive oil
2 T Balsamic Vinegar

Directions:
Directions:
Brush the vegetables with olive oil, salt and pepper and grill. When cool cut into bite size pieces.

Cook pasta per box directions and cool. Mix with vegetables, cherry tomatoes and pesto vinaigrette.

Serve on top of mixed green. Optional -top with crumbled mozzarella or parmesan
