Ingredients: Protein 2 1/2 # firm tofu, white fish, ( mani-mahi, cod or halibut) chicken or steak
Mediterranean Seasoning Blend 3 T toasted sesame seeds 3 T oregano 1 T crushed red pepper 1 T Cumin 1 T salt
Lemon Tahini Dressing 2 T tahini 3 T lemon juice 2 t olive oil 2 T water or more if needed salt to taste
Fixing 2 C quinoa cooked 2 C Lacinato Kale shredded 2 small cucumbers peeled and diced 2 C cherry tomatoes 1 avocado diced artichoke hearts roasted peppers add and roasted vegetable or fixing that appeal to you

Directions:Sprinkle protein with Mediterranean seasoning blend. ( You will have plenty or seasoning left over to use for your next creation).
Cook protein on grill, pan or oven
Dressing Whisk all dressing ingredients together Add more water if needed to achieve desired consistency
