Casserole:
1 lb. loaf of Sourdough or French bread, cut into chunks
2-3 lg. apples, chopped or sliced thin
8 lg. eggs
2 c. milk (whole or 2%)
½ c. heavy whipping cream
½ c. sugar
¼ c. light brown sugar (unpacked)
2 tsp. vanilla extract
2 tsp. cinnamon

Streusel Topping:
¾ c. all-purpose flour
¾ c. firmly-packed brown sugar
1 tsp. cinnamon
1½ tsp. apple pie spice
½ c. salted butter, cut into pieces

Directions:

Grease a 9x13" casserole dish. Line the bottom of the dish with the apple slices or mix in with the bread chunks. In a large bowl, whisk eggs, milk, cream, sugar, brown sugar, vanilla, and ground cinnamon. Cover the casserole and store in fridge overnight.

Preheat oven to 350º F. Bake the casserole 35-40 minutes.

While the casserole bakes, combine the dry ingredients for the streusel. Add the butter and mash into dry ingredients until it forms crumbly mixture. After the casserole has cooked remove from oven. Add the streusel crumble topping over the casserole and bake another 5 minutes or until streusel is melted.
