½ tsp instant yeast
2 C all-purpose flour
1 T sugar
½ tsp salt
2 C milk
8 T melted butter, cooled
½ tsp vanilla, optional
oil for brushing waffle iron
2 eggs

Directions:
Directions:
1) On the night before you want to enjoy these waffles, (before going to bed), combine dry ingredients and stir in milk, butter and vanilla in a large bowl. Cover with plastic wrap and set aside overnight at room temperature.
2) The next morning, separate eggs and stir yolks into batter. Beat the whites until they form soft peaks. Fold gently in to batter. Cook waffles and serve. Extras can be frozen once cool and brought back to life by toasting.

I made these for the family during the holidays last year, and got rave reviews. They are crisp and crunchy on the outside, and creamy and awesome on the inside.
