Ingredients:  
2.5 pounds rhubarb
2T lime juice
2.75 C sugar
2-4 T honey
2 T tequila/mezcal
1/4 tsp cracked black pepper

Directions:
Directions:
1) Macerate 1/2 " thick pieces of rhubarb in sugar and 1T lime juice 1 to 12 hours.
2) Bring mixture to a boil over medium heat, cook 7-9 min with minimal stirring
3) In last minute of cooking add remaining 1T lime juice, honey to taste, tequila and cracked pepper
