2 large cans white hominy (Bush’s or La Preferida)
1 tbsp. Butter or margarine
3-4 cilantro stems
2 green onions
1 med carrot (or 4 baby carrots)
1 small bag frozen green peas (make sure they are not sweet peas)
Salt
Pepper

Directions:
Directions:
* Open both cans of hominy and boil with water in large pot
* Boil ¼ c. green peas, drain and set aside
* Cook carrots and finely dice
* Finely chop cilantro leaves only (pull off of stems)Finely dice green onions
* Set aside all above ingredients
* Bring hominy to a boil and drain
* While hominy is still hot, add all above ingredients
* Add 1 tbsp. butter or margarine
* Add salt and pepper to taste
