1 10 inch flour tortilla
1 rotisserie chicken, skin discarded and shredded (3 Cups)
½ cup finely chopped cilantro leaves
½ cup drained jarred pickled jalapenos, chopped
2 cups shredded sharp cheddar cheese
salt and pepper
2 large eggs
1 cup whole milk
1 cup flour
1 tsp baking powder.

Directions:
1) Adjust oven rack to middle and preheat to 450 F.
2) Grease 9 inch pie plate. Press tortilla into prepared plate and spray lightly with cooking spray
3) Toss Chicken, cilantro, jalapenos, 1 cup cheese, ½ tsp salt and ½ tsp pepper in large bowl until combined. Spread over tortilla
4) Whisk eggs, milk, flour, baking powder and ½ tsp salt in a bowl until smooth. Pour over filling. Then sprinkle with remaining cheese.
5) Bake until surface is golden brown, about 20 minutes. Let cool for 5 minutes. Serve.
