Combine sugar, salt, butter and cream cheese, almond and vanilla extracts.
Add egg yolk and blend well.
Lightly spoon flour into measuring cup, level off and stir into the mixture.
Wrap in plaxtic wrap and chill for 30 minutes.
Preheat oven to 375º
On a lightly foured surface, roll out dough, one third at a time, to ⅛" thickness.
Cut into desired shapes with lightly floured cutters.
Place 1" apart on baking sheet.
Brush lightly with slightly beaten egg white and sprinkle with sugar.
Bake 7 - 10 minutes or until edges are brown. Let stand 3 minutes before removing to wire racks.
Cut into star shapes. After baked and cooled, put together 2 stars, sandwich style with ½ teaspoon seedless black raspberry jam. Dab more jam on alternating points to seal them. Dust both sides with powdered sugar.
CHERRY CHIP PECAN
Add 1 cup cherry chips and ½ cup chopped pecans. Cut in your favorite Christmas shapes. Decorate by dipping in melted white chocolate, tinted with food coloring if desired. Add colored sugar, red hots, etc, if desired.
