3 pealed and diced sweet potatoes
One half Spanish onion or Valdalia diced
I diced pablano or jalapeņo pepper
1lb mild sausage
1 Tbs olive oil
2 Tbs butter
Salt
Pepper

Directions:
Directions:
In skillet brown sausage, set aside and start sweet potatoes with 1Tbs of olive oil and 2 Tbs of butter stir occasionally. As sweet potatoes start to soften add onion, peppers, salt, and pepper. When potatoes start to crisp up add sausage for 3 minutes stirring every minute. Let cool. Can be served warm or cold!
