1 9-inch pie shell, baked

FOR THE FILLING:

3 cups whole milk
3/4 cup white sugar
1/3 cup all-purpose flour
1/4 tsp salt
3 egg yolks, slightly beaten
2 Tbsp butter
1 tsp vanilla extract

3 ripe bananas (just nicely ripened & sweet, NOT Banana Bread ripe!)

FOR THE FILLING:

In a large saucepan, scald the milk--heat to boiling but don't let it boil

In another saucepan, combine sugar, flour and salt; gradually stir in the hot milk.
Over a medium heat, stirring occasionally, cook until thickened. Cover, and stirring occasionally, cook for 2 minutes longer.
In a small bowl, have the egg yolks (slightly beaten), ready; slowly stir a small amount of the hot mixture into the beaten yolks; when thoroughly combined, stir yolks into hot mixture.
Cook for one minute longer, stirring constantly.

Remove from heat and stir in butter and the vanilla.
Let sit until it is lukewarm.
Slice bananas into the bottom of the prepared shell. Pour warm mixture over the bananas.

Cool and serve topped with whipped cream.

Before Cool Whip and Instant Pudding, this is how a cream pie was made.



ALTERNATES:

If you leave out the bananas, you have VANILLA CREAM PIE.

If you add 1 cup of shredded coconut to the milk as it's being heated, you have COCONUT CREAM PIE.


I got this recipe off of the Internet in 2008.





MARIAN'S WAY:

Brush the inside of the cooled blind-baked pie shell with melted chocolate and let that set before you add your filling. The chocolate is really delicious with the bananas and cream filling. And the bonus of this is the chocolate keeps your crust from going "soggy".
