3 lbs small red potatoes
1 stk salted butter
2 C shredded Cheddar
1 clove garlic, minced
1 C sour cream
1 C milk
1/4 C minced onion
Salt & pepper to taste

Directions:
Directions:
Cook whole, unpeeled potatoes about 20-25 minutes, drain and put back in pan. Add stick of butter cut into pieces. Heat oven to 350º & grease baking dish. Mash potatoes coarsely. Add 1 cup of the cheddar cheese & garlic, mix well. Add sour cream, mix. Add milk & onion, season w/salt & pepper. Transfer to baking dish, top w/1 cup of cheddar cheese. Cover & bake 35-40 minutes. Uncover last 15 minutes to let cheese brown.
