1/4 cup butter
1 large sweet onion
1 12 oz. cab evaporated milk
1 32 oz. carton chicken broth
1 14 oz. bag frozen broccoli florets thawed
1 16 oz. loaf Velvetta cheese
1 cup parmesan cheese
salt and pepper to taste

Directions:
In sauce pan melt butter. Chop onion and saute in butter until tender. Add flour to onion mixture and slowly stir in milk. Simmer until smooth. Pour chicken broth into large stock pot. Add onion mixture. Add cheeses and salt and pepper to taste. Simmer approximately one hour.
