4 Cups Crumbled Cornbread
1 Stick Butter, melted
1 Cup Chicken Broth
1 Chicken; cooked; de-boned, skin removed and chopped
Cup Chopped Onion
Cup Chopped Celery
Cup diced green onions
Cup Mayonnaise
tsp. Salt
2 Eggs
1 to 2 cans Cream of Mushroom Soup
Cup Grated Parmesan Cheese

Combine the cornbread, melted butter and chicken broth. Mix well. Place of this mixture in a greased 9X13 casserole dish. Combine chicken, onion, celery, mayonnaise, and salt. Mix well. Spread this mixture over the cornbread mixture in the casserole. Cover with the remaining cornbread mixture. . Beat the 2 eggs; add enough milk to them to make 1 cup of liquid. Pour this over the casserole. Cover with plastic wrap and refrigerate overnight. When ready to cook, spread the cream of mushroom soup over the top of casserole. Bake at 350 for 30-40 minutes. Sprinkle top with the Parmesan Cheese and bake an additional 10 minutes.
