1 10 lb. bag of red potatoes
1/2 cup finely chopped onion
2 Tbsp. chopped fresh parsley

Dressing:
3/4 cup light Olive Oil
1/4 cup vinegar
1/2 cup water
1 tsp. sea salt
1/4 tsp. freshly ground pepper

Directions:
Directions:
Wash potatoes.
Put potatoes ( with the peel ) in a large kettle.
Bring to a boil. Simmer until a fork goes easily through the potatoes.
Drain the potatoes and let sit until cooled.
Skin the potatoes and slice them into the desired size.
Add the diced onion, and the dressing. Mix together.
Add the chopped parsley, salt and pepper.
Put the salad in the fridge so it can marinate overnight.
In the morning taste it and adjust seasonings. It may also need more vinegar, oil or water!
