2 eggs
teaspoon baking powder
teaspoon salt
teaspoon pepper
6 medium potatoes peeled and shredded
cup onion shredded
Olive oil

Directions:
Directions:
Beat together eggs, flour, baking powder, salt, and pepper. Stir in potatoes and onion.
Heat a thin layer of oil in large skillet over medium heat. Drop spoonfuls of potato mixture into the
skillet and press down to flatten. Cook about 3-4 minutes on each side until crisp. Cool on paper towel.
Serve with sour cream
