1/2 cup butter
3 egg yolks
2 tbsp fresh lemon juice
dash of salt
1/4 tsp pepper
dash of cayenne pepper

Directions:
Directions:
1. Melt butter and heat until bubbling. This can be done in the microwave so the butter doesn't burn. Butter must be very hot or sauce will not thicken in the processor.

2. Steel Knife blade: Process yolks with lemon juice and seasonings for about 5 seconds. Pour hot butter through feed tube in a thin but steady stream while the machine is running. Process about 10 seconds longer. Serve immediately.

3. Yield: about 3/4 cup sauce. May be doubled successfully. Do not freeze. Delicious with fish or vegetables or eggs benny. May be held over hot water in the top of a double boiler until serving time to keep warm. If sauce curdles while standing, or separates, whisk in 1 or 2 tbsp hot water.
