1 lb select boneless NY sirloin
flour
beef broth
chili powder
cumin
oregano
refried beans
burrito wrappers
monterey jack cheese
Jalapeno Peppers

Directions:
Directions:
1) Slice the meat 1/8 " thick and dredge in flour by placing in a paper bag and shaking vigorously
Quickly Saute the meat in vegetable oil, adding oil as necessary.
2) Add enough beef broth to the pan to wet all the meat and begin to scrape off the fond and incorporate into the mixture.
3) Now add the spices to taste: Start with 2 T chili powder, 1 1/2 T cumin and 1 Tsp oregano, and then adjust to your heat tolerance. Cover the pan and set on low heat for at least an hour, scraping the bottom and taste testing to adjust the spice level.
4) Spread the contents of a can of refried beans in the bottom of a baking dish and cover the beans with grated cheese. (I also like to add round slices of jalapeņo peppers to my side of the dish as a little decorative touch of heat. Zap the mixture till it's good and hot.
5) Finally, add the meat mixture to oven warmed wrappers and spoon on the bean mixture. This is one of the beefiest treats I know.
