2 lbs Ground Beef
1 egg
1 Cup Breadcrumbs
1 TBSP Chopped Garlic
1/4 Cup Chopped Dry Onions
Salt & Pepper to taste
2 TBSP Worcestershire Sauce

1 Cup On the Border Chunky Salsa
1/2 Cup BBQ Sauce

In a small bowl combine salsa and bbq sauce, set aside

Combine all ingredients and all but 1/2 cup of the salsa/bbq sauce mixture

Grease a 12-count muffin pan, and fill with meat mixture. Lather top of each "muffin" with remaining salsa/bbq sauce mixture to help create the good crunchy part of the meatloaf.

Bake for 20 minutes at 400 degrees and then broil for another 15 minutes.

We LOVE meatloaf but not that it takes HOURS to cook, you can use any meatloaf recipe that you want, but this is our favorite because using OTB chunky salsa gives all the taste of fresh veggies without all the chopping.
